Chopped Habanero MIX, Prince of Chilies, has a pungency of between 300,000 and 425,000 SHU. It is distinguished by an unmistakable aroma, cherished by aficionados, which holds up well to processing and cooking, and a flavor often juxtaposed with that of fruit, particularly apricot. Habanero has held the title of "hottest chili pepper in the world" for many years and is a cultivar typical of the Yucatan Peninsula. The fresh, organically certified fruits are hand-picked and carefully selected for color (green and orange) and firmness. They are then subjected to 40 hours of low-temperature drying so that all residual water inside them is removed. They are then processed through a chopping process that does not alter their flavor and is also aimed at maintaining their original bright color. Chopped chili peppers can be used as a common spice to flavor any dish, instead of salt (it has no contraindications), but also to color and enrich bread, pizza and focaccia doughs with flavor. This chili pepper, because of its very high quality and low spiciness, is also often used in the artisanal making of spicy cheese.
